This is a recipe that my siblings and I have shared and tweaked over the years. It started with my brother, then I began making it, and now my sister is the pasta salad master. Our entire family loves it. It feeds a lot or a couple of people can enjoy it for a week. It is welcome at any summer BBQ. Enjoy!
Ingredients:
½ red bell pepper
½ orange bell pepper
½ red onion
1 can black olives
1 box bow-tie pasta
1 c. feta cheese
1 small block sharp cheddar cheese
2 packets dry Italian dressing seasoning
Directions:
Cut all the vegetables. Drain the black olives. Prepare the dressing according to the instructions on the packet and set aside. Boil the pasta, strain, and run cold water over it. Cube the cheese.
Mix everything together in a bowl then pour the dressing over it and mix until everything is coated. Chill in the refrigerator overnight.
If you desire more peppers, onions, black olives, or cheese feel free to add more. Just make sure there is enough dressing to coat it all. You can also add cucumber if you feel inclined.
