This is a delicious moist dessert cake. I hope you enjoy it, and it is great for this time of year.
Ingredients:
4 level cups all-purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
2 cups granulated sugar
1 stick butter, softened
4 large eggs
3 cups (about 6 small/medium) bananas
1/2 cup sour cream, plus 2 Tbs.
2 tsp. rum flavoring
2 tsp. vanilla extract
1 cup flaked sweetened coconut
Directions:
Whisk together the first 3 ingredients and set aside. With a hand mixer, beat together the sugar and soft butter; add eggs one at a time, beating between additions. Add flour and beat on low to just combine. Stir in bananas, sour cream, rum flavoring, and vanilla extract, then coconut. Pour batter into a well greased bundt pan or two 9×4 loaf pans. Bake in a preheated 350-degree oven for one hour and 5 minutes. Let cool in pan for 6-8 minutes; transfer to a plate.
Glaze Ingredients:
1 cup confectioners sugar
Zest from 1/2 lime
3 Tbs. fresh lime juice
Directions:
Stir to combine, and pour glaze over the warm cake.
