I had to go out of town again as a dear friend had a sudden need for a house and dog sitter. Rodger would have gone, but his EPAC responsibilities made it too difficult, so I went. And to make it productive for being away from home I brought my canning equipment and shopped at some local farm stands.
I was able to can up 17 quarts of sweet potatoes, 4 quarts and 16 pints of green beans, 5 pints of corn, 6 pints of corn cob stock, 10 half pints of mushrooms, 6 pints of okra for future frying, 4 pints of banana for future banana bread, and some emergency water since I needed to fill up the canner, and water for emergencies is just as important as food. Not to waste anything, I bundled up the corn husks to dry as fire starters, dried the corn silk for tea, and all scraps and peelings are saved for future stock or pig food.
Before I left, I peeled and cut up all my summer squash for easy meal prep. Then I got a call from a neighbor that there was someone who really would like some. I will check my garden as I still have plants in the ground and will see if I can gather some up to share.
I also grated my cucumbers and made two loaves for cucumber bread; it was wonderful and will be making more in the future. Need easy meal plans as next week the old farmhouse foundation is being repaired, and I am not sure how that will affect our home life.
Jenny’s General is going through the planned changes. The old cooler was sold and moved out. There is a new cooler on the order, and the back wall will get a fresh coat of paint. Antique counters will be moved and new displays installed.
New products are being ordered so stay tuned for announcements, but hopefully locals will start shopping instead of the random tourists driving through Equality. If not, then no reason to keep the business open after five years of trying.
Don’t forget to support Equality Volunteer Fire Department’s First Saturday fundraising event in two weeks on August 5, as well as training on the first and third Monday of each month. I plan on carving out those Mondays to show my support starting next month, and I hope to see you there, as well.
July’s Neighborhood Watch meeting is Thursday, July 27, at 6:30 p.m. Look for the new sign to be displayed as you drive on Alabama Highway 9 in the coming weeks. The meetings are informative, as well as a time to meet and greet neighbors and enjoy good eats potluck style.
Equality Performing Arts Center’s (EPAC) next event is “Karaoke” tonight, July 21. While it is not mandatory, you are encouraged to bring a dish of shareable food for our “Potluck,” and if you can afford to drop something into the donation jar for the music, it helps keep the lights on. The EPAC provides free coffee, iced tea, water, and fresh-popped popcorn, as well as some of the potluck offerings.
