This recipe is another great meatless option for those trying to eat healthier overall, cutting red meat from their diets, or trying to save money at the grocery store. Try this alternative to meatloaf, celery loaf!
Ingredients:
¼ c. toasted bread
½ c. tomato juice or sauce
1 c. shopped walnuts or pecans
2 c. celery with leaves (ground)
1 tsp. salt (can omit)
1 small onion, minced
1 Tbs. oil
Directions:
Mix ingredients in order given. Bake in a greased baking dish for 40 minutes in a 350-degree oven. Serve like meatloaf. Enjoy!
