This delicious casserole goes fast at potluck dinners! Jiffy corn muffin mix makes a sweeter corn casserole. Other mixes may not be as sweet.
Ingredients:
1 can whole kernel corn, drained
1 can creamed corn
1 stick butter or margarine, melted
2 eggs
8 oz. sour cream
1 package Jiffy corn muffin mix
Directions:
Mix all ingredients together just until mixed smooth. Pour into 2-quart casserole dish. Bake at 375 degrees for 50 minutes (325 degrees for 60 minutes if using a glass dish) until browned and set. Makes 8 servings. Enjoy!
