Poor Man’s “Pecan” Pie

My son, Kelvin Owens, shared this recipe in a cookbook that his church printed and sold many years ago. Along with the recipe, he noted, “My thrifty mother often made this crunchy pie for her husband and eight kids.” I make it for family and friends now. I hope that your family and friends will also enjoy this recipe!
Ingredients:
2/3 c. sugar
1 stick margarine
2 eggs
2/3 c. light Karo syrup
2/3 c. oatmeal
1 tsp. vanilla
1 unbaked pie shell
Directions:
Cream together sugar, margarine and eggs. Add syrup, oatmeal and vanilla. Pour into pie crust. Bake at 350 degrees for 45 minutes, until browned and set. Makes 8 servings.
