This makes a great alternative to fruit cake. It is excellent for breakfast. Enjoy!
You’ll need:
2-3 loaf pans or one bundt pan
1 large egg
3 cups self-rising flour
1 ½ cups sugar
½ c. butter
½ c. buttermilk
20 oz crushed pineapple
1 tsp. pure vanilla extract
½ tsp. coconut extract
1 c. coconut flakes
½ c. chopped walnuts
Directions:
Preheat oven to 350 degrees. Grease the loaf or bundt pans with cooking spray or melted butter. Melt the ½ cup butter. Mix the butter, egg, pineapple, buttermilk, and both extracts together. Mix until creamy. Add in the sifted flour and sugar a little at a time. (If the mix is too thick add more buttermilk.) Fold in the chopped walnuts. Mix until thick and creamy. Pour into the baking pan. Bake at 350 degrees for an hour to an hour and a half – make sure it is done in the middle.
