Potato Salad

This is a good and fairly quick recipe that goes super well with a quickly grilled piece of fish or chicken breast with sliced tomatoes.
Ingredients:
3 lbs. red potatoes, washed (peeled or not), cut into fourths
1 cup plain yogurt
3/4 c. sour cream
3 Tbs. white vinegar
1 tsp. salt
2 eggs, hard boiled about 6 minutes
Freshly ground pepper to taste
1/2 sweet onion, chopped finely
3 Tbs. chopped fresh chives
3 Tbs. chopped fresh dill
A good fresh squeeze of half lemon juice or lime
Instructions:
Boil potatoes in (cold) salted water, and cook for 10-15 minutes until fork tender. Drain, rinse in cold water and drain well, and set aside
Meanwhile, mash hard-boiled eggs with a fine potato masher. Salt and pepper to taste in a shallow bowl; add a little brown mustard if you like.
In a large bowl, blend yogurt, sour cream, vinegar, salt, and pepper; add potatoes, egg and onions if using, dill and half of the chives.
In serving bowl (if not already) sprinkle with remaining chives, the lemon juice, and if you like, a little shake of paprika
Should serve 6.
