Delicious salad, lemonade pie

This week’s “Coosa Cooks” is a two-for-one, with recipes for a pretty delicious salad and creamy lemonade or limeade pie!
To make the salad easily, it’s important to have your “mise en place.” Prepare ingredients and have them ready in order of addition. You can add more fruit like fresh pineapple, banana and orange slices to the salad.
Salad ingredients include:
Washed and sliced romaine lettuce for two
1/2 a white or red onion, thinly sliced
1 celery rib, thick strings off, and finely minced
1 c. fresh strawberries, washed, sliced into quarters, and mixed with 1 tsp. brown sugar and 2 tsp. balsamic vinegar; stirred and set aside
1 fresh egg, cracked into a saucer type dish containing a little water to cover the bottom by about half an inch; microwave 60-90 seconds, baste w/water halfway through cook time.
1-2 slices lean Kentucky cooked ham, cut into 1/2-inch strips
1 ripe avocado, pit removed and sliced; spoon out with a few drops of lime juice
1-2 Roma or other tomatoes, sliced
1 ripe mango, peeled, cut into chunks off pit
Handful of dark grapes, washed and sliced in half
1/2 a honey crisp apple, peeled and sliced or chopped
Plus your best loved salad dressing; remember Ranch has no carbohydrates.
Grated cheese, crema or sour cream, salt and pepper, optional
Directions:
Once you have everything prepped, layer evenly on pretty plates, starting with lettuce, celery and onions. Cut egg in quarters and add to each end of the plate, then add sliced avocado all around, ham slices fan style, then tomatoes in between the rest. Spoon on grapes, mango and strawberries (mini marshmallows if you like, and pecans), apple slices, and grated cheese. A little salt and pepper to your taste, plus crema or sour cream, and your dressing. Can serve with a crusty French bread roll or two, or buttered cream crackers.
You can enjoy this beautiful and healthy dish as a couple, with a friend, make more for company, or taken in separate containers to compile at a picnic site in the shade. Yes, and take the pie, as well, for your dessert.
Easy and cooling Lemonade or Limeade Creamy Pie
This pie is a great compliment to any meal, and if two of you, there will be leftovers!
Ingredients:
1 can of condensed milk
1 small container Cool Whip, defrosted
6 oz. can lemonade or limeade concentrate drink mix, defrosted
9-inch Graham ready crust
Directions:
In a medium mixing bowl, beat condensed milk with Cool Whip, then add the lemonade mix undiluted, plus lemon juice if you like.
Pour well-mixed pie filling into the Graham crust and put in the refrigerator to set up, adding garnish of lemon slices and/or kiwi slices as you serve.
