As soon as the pollen moves out it will be the perfect time for a picnic. Maybe these recipes will help you enjoy the outside. My mum often made a late afternoon tea for us in the back garden during the summer months. I love eating outside in the fresh air.
Delicious salmon sandwiches
Ingredients:
1 tall can of salmon, bones and skin removed
6 oz. cream cheese, softened
1 Tbs. minced onion
A good pinch of salt, black pepper, thyme, and dill weed
2 Tbs. fresh lemon juice; more if you prefer after a test taste
Fresh soft bread slices, crusts removed.
Directions:
Combine cleaned salmon, cream cheese, onion, and seasonings; mix well. Add lemon juice. Spread the bread with this mixture, having cut off the crusts. Store in a plastic air-tight container between waxed paper and into the cooler until ready to eat. They are super good.
Apple-carrot slaw
Ingredients:
2 granny smith apples, peeled and thinly sliced
1 small onion, cut in half and thinly sliced
3 carrots, shredded
Minced celery (optional)
2 Tbs. dark brown sugar
1 Tbs. cider vinegar
1/4 c. dried cranberries
Salt/pepper to taste
Parsley or cilantro for garnish
Directions:
Combine all ingredients and let flavors mellow in the fridge for a couple of hours. Add raisins if you’d like and lemon juice.
