Surprise Beef Packages

Coosa Cooks

Recipe submitted by Rosie Morgan

This surprise package recipe was shared with me when I worked for a medical doctor in Montgomery. I have shared it and made it for my family and friends for more than 30 years. Make it your new favorite! It’s a complete meal and just an hour of baking. Makes three meals.

Ingredients:

1 pound lean ground beef (made into three patties – add salt, pepper and garlic powder)

3 Tbs. Worcester sauce

3 squeezes of ketchup and spicy mustard

3 thick sliced rings of a large white onion

4 fresh carrots, peeled and sliced diagonally in chunks

3 medium Yukon gold potatoes, peeled and cut lengthwise in quarters

3 Tbs. Worcester sauce and salt

Optional: thin cabbage wedges

Directions:

Lay two large pieces of aluminum foil for each package across one another on a jelly roll pan, shiny side up, in opposite directions. Lay one beef patty on each foil set. Top it with a squeeze of ketchup and mustard, plus a tablespoon of Worcester or more. Lay a thick onion slice on top, and divide potatoes and carrots around the patties. Salt the vegetables and add more Worcester.

You can also add cabbage here, but it cooks better and more evenly in a glass Pyrex dish with a lid and very little water with a little sprinkle of kosher salt; heat for 5 minutes on high in the microwave, stirring halfway through.

Wrap the foil as you would a lunch sack, tightly, and bake in a 375-400 degree pre-heated oven for an hour. Remove from the oven and microwave the cabbage, if you choose. Your meal is ready to serve; one package per plate. Enjoy!
